Half a loaf.
May. 18th, 2008 11:24 amI felt baking urges this morning. Ostensibly this is to get rid of a lot of second-tier ingredients cluttering up the kitchen (like the 5lb bag of bread flour), but see also "reversion under stress".
Banana bread: old familiar turf, I scarcely need to post about it at this point; except that I'm trying half whole-wheat flour and half all-purpose white.
Standard White Loaf: This is my second Epic Fail at the same recipe (out of Nigella), and I don't know why. It just won't rise. Not a yeast problem, 'cos both times I used more from the same purchase in other recipes and it did fine. Bah.
Parmesan Herb Loaf: This, on the other hand, is working well. The recipe is from the back of the yeast package, of all things. I've shaped the loaves and they're just about done rising & ready to bake. Smells lovely so far.

Me, i do it thus:
2 tablespoons sugar + 1 cup warm (NOT HOT) water + 1 tablespoon yeast.
mix.
come back in 10 minutes. Is it getting bubbly? Yah? Good!
Add 1 tablespoon melted butter, 1 teaspoon salt, 1/3rd cup milk, 5 cups king Arthur flower one cup at a time. Mix it well each cup. after 5th cup, it should pull back from sides of bowl.
Dump onto counter.
Kneed it for at least 5 minutes, uintil its smooth and nice and not very sticky.
Put into greased bowl. Place greaced bowl on top of running dryer.
come back in an hour, should be well risen.
punch down, kneed a bit more, make into loves, let rise another 45 minutes. When 45 is up, turn on stove to 350. When stove is heated, stick in for 35 minutes.
