May. 11th, 2004 08:00 pmI felt all virtuous for getting Tea & Sympathy's all-vegetarian lentil casserole for dinner. (Instead of, y'know, Welsh Rarebit or something else horrendously bad for you.) I had not the least realization that two cups of lentils is something on the order of 450 calories.
Edit: Why is the "shocked" icon smiling? I don't know about them but I'm not usually smiling when I'm shocked by something.

I can remember about 10 years ago when the Vegetarian Society was lamenting that very few chefs knew how to deal with vegetarians. Whilst this has changed its now people like the ceoliac society who are doing the same lamenting about the lack of knowledge about food allergies. It does seem that quite a few chefs get taught their trade and then let their knowledge stagnate, not learning anything more.

Date: 2004-05-12 06:02 am (UTC)although it is interesting that the drive for "low fat" diets hasn't done that much for the health of the US when it comes down to it. Banning the use of corn syrup (only used since its cheaper) or corn starch would probably do more :)
As I discovered when I first started seeing my endocrinologists--it's not _low fat_ that helps you lose weight. It's _right fat_. Monounsaturated. Use it wherever you would use fat. Olive oil, Canola oil, and Omega3 fatty acids (I take 2 caps 2x a day of fish oil as part of my regimen).
What did all this do for me, you ask?
It changed the texture of my hair, which used to be very "annoying" (i.e. thick and large and very unmanageable without tons of "product").. now it's still thick, but behaves well.
It ended my dry skin problem.
I found I had a problem with anxiety and depression.. and had had those problems for years. Getting better every day, as they say :)
People don't realize the the right fats are necessary for things like healthy brain activity, good eyesight, good skin, hair and nails, etc.
In it's own way, Atkins has helped end the low fat craze.. unfortunately that's not the most healthy diet to be on, either. Moderating carb intake is important, but not making your body react to carbs by storing them as fat every time you eat them... :-/
